This African peanut soup is creamy, delicious and ready in just half an hour. I like to add sweet potatoes and arrow root in my peanut soup which makes it the best comfort meal for those cooler nights.

3 tbsp oil
1 large onion, chopped
4 cloves of garlic, minced
1 tsp green chillies, chopped
1 cup sweet potatoes, cut into 1 cm cubes
1 cup arrow root, cut into 1 cm cubes
1 tbsp curry powder
1 tsp turmeric powder
Salt to taste
1 cup tomatoes, chopped
2 cups coconut milk
1 cup water
4 tbsp Nuteez Crunchy Peanut Butter
1 cup spinach, roughly chopped
Heat oil in a heavy bottomed pot. Add the onions and cook until they turn translucent. Add the garlic and green chillies and stir.
Add the sweet potatoes and arrow root and stir. Cook for 5-8 minutes.
Add the curry powder, turmeric powder, salt, tomatoes, coconut milk and water and stir. Cover the pot with a lid and let simmer for 20-25 minutes or until the sweet potatoes and arrow root are soft and the soup is slightly thick.
Add the peanut butter and spinach and let cook for another 5 minutes. Serve.
